Antony / Founder

 

"I have been working in the restaurant business for over 23 years and have loved every minute of it. Having passion and working with great people makes it the best job in the world."

Antony was born and raised in North London. At 18 he began his kitchen career by joining the family business, Pasta Brown, in Covent Garden.

In 2013, after 19 years of hard work, he opened his own Italian restaurant on Exmouth Market. Paesan’s rustic menu embodies his love of fresh ingredients made from scratch – a passion that has carried him through the culinary trade for over 20 years.

First memory of cooking?

My Nana Carmela cooking a Sunday roast.

Favourite dish?

Cucuzzil – it’s like an aubergine parmigiana, but with marrow (big courgettes) instead of the aubergine. It’s a very humble dish from Southern Italy.

Favourite place to socialise?

My favourite socialising time is at Christmas with all the family.

How do you have your coffee?

Flat White.

Favourite song?

Wonderwall - Oasis.

Something you’d love to do but never have?

A pizza-making course in Naples.

Perfect day off plan?

Spending time with my wife and 2 children, anywhere as long as it’s sunny!

“Sharing food was and is a huge thing in my family and they always taught me the importance of starting with incredible produce and treating it with the respect it deserved.”

Helen’s passion for food is in her genes. Her earliest memories are picking summer berries with her grandmother, making pies with her mum, and fishing (rather unsuccessfully) with her dad.

After gaining years of experience from French patisseries to Melbourne’s bakeries, arriving in London she found herself at Lantana in Fitzrovia - one of London’s first true antipodean cafes.

First memory of cooking?

Making my mum’s famous scones with her and eating half of the ingredients before putting them in the bowl. They never had enough fruit...my bad.

Favourite dish?

Boeuf Bourguignon, it brings back huge nostalgic memories of spending all our summer holidays in the south of France as children.

Favourite place to socialise?

Whichever new restaurant Timeout recommends this week.

How do you have your coffee?

Short and black - sometimes espresso, sometimes with a little hot water on the side so I can keep topping it up and enjoy it for longer.

Favourite song?

Heart of Gold - Neil Young.

Something you’d love to do but never have?

I would love to go camping, I think this is something that would push me right outside of my comfort zone.

Perfect day off plan?

A trip to my local market (Borough Market) for coffee and a croissant, early morning yoga class and then spending the day exploring a new corner of London.

Head Baker Jordan.

“When I was 4 and my mum was cooking she showed me a crayfish for the first time. I was so scared I packed my teenage mutant ninja turtles rucksack and set off never to return.

New Zealander Jordan grew up on the coast in Wellington. A happy-go-lucky guy who dabbled in delivery driving and plumbing before his calling to the kitchen.

He worked as a full-time barista for three and a half years before taking a job at a Wellington based boutique bakery, Pandoro. His natural talent in the kitchen soon took him from pot-wash to pastry chef, and from NZ to London as the Social Coffee Co’s head baker.

First memory of cooking?

My first taste of cooking was taking the reins off my dad and looking after the BBQ!

Favourite dish?

Roasted lamb...typical Kiwi.

Favourite place to socialise?

The beach!

How do you have your coffee?

Strong, short, sometimes with a little milk. I like bold flavours.

Favourite song?

West Savannah - Outkast.

Something you’d love to do but never have?

Hang Gliding.

Perfect day off plan?

Sun, beer, BBQ, friends, laughter.
